Coconut & Goji Berry Energy Balls, we made a batch of these and we just had to share the recipe! They are full of goodness and a great little snack to keep you energised!

Ingredients 

  • 1 cup (220 g) packed, pitted dates
  • 1 cup (95 g) fine or medium unsweetened shredded coconut
  • 1/2 cup (70 g) raw cashews
  • 1/2 cup (65 g) dried goji berries
  • extra coconut for coating, optional

Soak the dates before if they need to be softened and whizz nuts, berries and coconut up in blender, then add dates and then mix again in blender. Then all you need to do is make them into little balls and then roll in the extra coconut for even more goodness and to finish!  You can add cacao powder as a choc version. Store in fridge or you can freeze them as well.
